To celebrate the beginning of Irish Heritage Month, The Pembroke is excited to announce an exclusive culinary takeover led by Irish Chef Ryan O’Sullivan, winner of Hell’s Kitchen Season 22. This limited-time dining experience celebrates Irish cuisine through the lens of O’Sullivan’s journey from Cork, Ireland, to Gordon Ramsay’s famed kitchen and beyond.
Dinner guests can expect to experience a thoughtfully curated menu that blends Chef O’Sullivan’s refined technique with his deeply personal Irish-inspired dishes. Menu highlights include a lobster raviolo inspired by O’Sullivan’s mother & her home cooking traditions, updated versions of dishes that helped earn his win on Hell’s Kitchen - including a veal course that Ramsay called “one of the best dishes I’ve ever had” - and a finale featuring Ramsay’s iconic sticky toffee pudding, prepared using the legendary recipe.
This takeover symbolizes a full circle moment for The Doyle Collection, the family-owned Irish hotel group behind The Pembroke and The Dupont Circle Hotel. Prior to his Hell’s Kitchen win, O’Sullivan worked at The River Lee in Cork, another Doyle Collection property. At the heart of the evening is O’Sullivan’s philosophy that cooking begins at home and is rooted in comfort, community, and connection, reflecting the true spirit of Irish hospitality.
Chef Ryan O’Sullivan, Hell’s Kitchen Season 22 champion, is an award-winning chef originally from Cork, Ireland. Recognized for his refined culinary style, disciplined technique, and ingredient-driven approach, O’Sullivan brings thoughtful storytelling and a deep respect for Irish culinary traditions to every dish.
