Amparo Fondita, a Michelin Bib Gourmand restaurant in Dupont Circle, is ditching the traditional lunch format and rolling out a weekday lunch burrito takeover by its sister concept El Gabacho. The April pop-up also serves as a preview of El Gabacho, Irabién’s forthcoming fast-casual concept, inspired by those formative stops in Villa Ahumada in the Chihuahua desert. It’s “simple, soulful food that honors tradition while meeting the moment,” according to Chef/Owner Christian Irabién.
The El Gabacho pop-up at Amparo, live through August 14th, is centered around an all burrito menu built for takeout and delivery. No reservations, no drawn-out service—just fast, bold flavors designed for DC’s hungry on-the-go crowd. Guests can order on the website or via DoorDash, Grubhub or UberEats delivery apps. Guests can sit in the restaurant with their food, although no table service will be available.
The menu leans into handmade flour tortillas and deeply flavorful fillings, including:
- Puerco en Salsa Verde — tomatillo-stewed, pork shoulder, Yukon potato
- Chile Colorado — guajillo-braised flank steak, Yukon potato
- Chile Relleno — roasted Anaheim chile, Chihuahua cheese
- Picadillo — tomato-stewed ground beef, vegetables, Yukon potato
- Pollo Chipotle — chipotle-stewed chicken, Yukon potato
- Frijoles con Queso — refried pinto beans, Chihuahua cheese
“We pivoted lunch at Amparo to offer something deeply personal: handmade flour tortillas with manteca, rooted in my upbringing between Chihuahua and Texas. We wanted to offer something flavorful and filling at an accessible price and designed for quick pickup, so our community can still enjoy something nourishing and delicious despite today’s economic pressures,” said Irabién.
Bar menu: margs, beers and shots available in house or for carry out.
